Proizvodnja mlečne kiseline tokom anaerobne glikogenolize ključna je za uspešno sazrevanje. Mlečna kiselina deluje na mišićna vlakna, razgrađujući strukturu uz pomoć enzima za razlaganje proteina nazvanih proteaze. Ovo omekšava ćelijske veze, omogućavajući proteolitičkim enzimima da deluju na mišićno tkivo i razgrade stvrdnute mišiće. Kao rezultat toga, meso ponovo postaje nežno.

Suvom zrenju, koje može trajati od 3 do 8 nedelja, koristi se kako bi se razvili željeni orašasti i masni ukusi koji se ne mogu postići kraćim periodima zrenja.
