Enzimi igraju ključnu ulogu u omekšavanju mesa tokom procesa zrenja. Enzimsko sazrevanje mesa može trajati od 1 do 8 dana, u zavisnosti od vrste životinje. Proizvodnja mlečne kiseline tokom anaerobne glikogenolize ključna je za uspešno sazrevanje. Mlečna kiselina deluje na mišićna vlakna, razgrađujući strukturu uz pomoć enzima za razlaganje proteina nazvanih proteaze. Ovo omekšava ćelijske veze, omogućavajući proteolitičkim enzimima da deluju na mišićno tkivo i razgrade stvrdnute mišiće. Kao rezultat toga, meso ponovo postaje nežno.

Suvom zrenju, koje može trajati od 3 do 8 nedelja, koristi se kako bi se razvili željeni orašasti i masni ukusi koji se ne mogu postići kraćim periodima zrenja. Tokom suvog zrenja, oksidacija i isparavanje vode dovode do stvaranja kore ispod koje enzimi i proteini ostvaruju svoju magiju, dajući mesu posebne ukuse i arome.

S druge strane, mokro zrenje uključuje kraći period vakuumskog pakovanja, rezultirajući profilom ukusa dominiranim mlečnom kiselinom. Suvo zrenje, s druge strane, omogućava da se mlečna kiselina sazreva u začinjen ukus i prirodno razvija glutamat, poboljšavajući ukus mesa dubokim umami ukusom.
